Nose: Big and intense right away. Rich caramel and dark brown sugar lead into vanilla bean, dark cherry, dried fruit and toasted oak. There’s a pronounced baking spice character underneath. Cinnamon, clove and a little black pepper. At 128 proof, a few minutes in the glass should help it open up.

Palate: Very full bodied and viscous. Dark caramel, vanilla, toasted pecan and raisins/dark fruit hit first, followed by layers of cinnamon, allspice and pepper. The Spanish oak brings a more distinctive, slightly tannic oak character than you’d typically find in a standard bourbon

Finish: Long, warm and drying. Dark chocolate, oak spice, black pepper and dried fruit linger, with the oak becoming more prominent toward the end. The high proof gives it a substantial heat, but there’s enough sweetness and fruit to keep it from being simply “hot.”
